Fundamental understanding of the tryptic hydrolysis of β-Lactoglobulin was developed by investigating substrate degradation and release of peptides in dependence of the reaction conditions like pH, temperature, ionic strength and molecular conformation of the protein. The hydrolysis was mathematically described by a generic model that allows the description of the time-dependent release of intermediate and final peptides. To enable the target use of functional peptides, a process was developed using Ion-Exchange Membrane Adsorption Chromatography to fractionate the hydrolysate.
